Hamilton Beach® Stand Mixer
When I was growing up in Plains, Georgia, home of Jimmy Carter, peanuts were a big part of my life. Many folks around made their living, as the President once did, from peanut farming. It was no surprise they made their way into our diets in a big way. Before I knew about peanut butter cups and ice cream, the original peanut treat were peanut butter cookies. After mixing up a batch, I would have to lick the beater clean, as well as the bowl. Then, the cookies came out of the oven soft and moist. They stayed that way for days! They never got hard as many cookies tend to. A yummy peanut buttery treat was never more than a few minutes away. Here is a recipe:
1 1/4 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 teaspoon vanilla
1 egg
Press 3/4 inch balls down with a fork and bake for 10-12 minutes at 375 degrees.
After beating in the vanilla and egg with my old mixer, I realized how much easier it would have been with an Eclectrics® Mixer.
